Effie May's One Pot Suppers

As I sat on a stool next
to the stove I watched Effie lovingly prepare all our family meals
each and every day. It was no frills cooking, using only the very
essential tools. Some pots and pans, a pressure cooker that exploded
on a regular basis, some wooden spoons, a few knives, a hand grater
for cheeses and vegetables, mortar and pestle for crushing spices,
and not much more. With these essential items she created meals I
continue to long for, and recreate to this day. A lot of these meals
were what she'd call her one-pot suppers.
There was always a crowd to feed at our house and one-pot dishes
worked well with unexpected visitors. Effie's kitchen had six mouths
to feed on a full time basis, and the doorbell was always ringing with
a visiting grandparent, aunt or uncle, and usually a friend of mine or
my brother's dropping by for dinner. And, let me not forget the
family dog and three cats. Needless to say there were rarely
leftovers.
