Alex Von Bidder, the co-owner of The Four Seasons' (American Continental Cuisine, 99 East 52nd St., NYC), said he would be "glad to serve SPAM," but only on one condition: "If the mayor and his wife would cut the ribbon for the first SPAM serving in the history of The Four Seasons.'" While Henny Santo, co-owner of Sign of the Dove (American Nouvelle Cuisine 1110 Third ave, NYC), had a similar reaction. She added that Sign of the Dove "would come up with something for a day or a week, in some humorous way, but we'd make it clear that this is in support of Mayor Giuliani." She later confirmed that "something" to be a "traditional Hawaiian maki roll," consisting of seaweed, rice and vegetables with SPAM inside.

Spam Mobile Bob Mignola, a chef at The Post House (Steakhouse Cuisine, 28 East 63rd St., NYC), explained that after covering up the name of the restaurant, he would "shape the SPAM like a filet mignon, broil it and serve it with bernaise sauce." Served alongside his SPAM steak would be creamed beets, onion rings and a baked SPAM Alaska for dessert. Reflecting on a suitable wine for this meal, Mignola asked: "They don't make Boone's Farm anymore, do they?"
