Chicken Paillard with Mixed Mushroom Surprise
1 lb. chicken cutlets
1 cup flour
3 cups assorted cleaned, sliced mushrooms
1 garlic clove, finely chopped
a few sprigs or leaves fresh herbs (oregano, tarragon, sage, parsley -- mix and match!)
olive oil
salt & pepperPound the chicken cutlets so they're nice and thin. Dredge them in flour, and shake off excess. In a skillet, sauté the chicken in a few tablespoons hot olive oil. Season with salt and pepper. Remove from skillet when meat turns white. Add mushrooms and garlic. Cook until softened, add herbs, and salt and pepper. Cook until flavors blend. Arrange chicken on a platter. Pile the mushrooms on top in the center.
Serves 4.
