MEYER LEMON CREME BRULEE
serves 8
Ingredients:
3 Large Eggs
2 Egg Yolks
8 oz. Sugar
6
oz. Lemon Juice
4 oz. Sweet Butter
Method:
In a large mixing
bowl wisk eggs and yolks until smooth. Bring water to a boil in a pot slightly smaller
than the mixing bowl. Place bowl on top and wisk mixture while turning
bowl. Add 1/3 of the lemon juice. As mixture thickens add another 1/3 of the lemon
juice. Continue wisking while adding the rest of the lemon juice. Continue to wisk
and add the butter. When butter is melted pour into creme brulee molds. Chill until
custard sets. Top each with 1 TB sugar and place under broiler until carmelized. Garnish
with fresh berries.
